Cooking Guru: S1E4: Korean BBQ Chicken and Garlicky Broccoli

Dinner Episode:


Prep Time: 5-7 minutes; Cooking Time: 10-15 minutes

4 boneless, skinless Chicken Thighs

¼ cup of packed brown sugar

1 tsp kosher salt

2 tsp low-sodium soy sauce

2 tsp dark toasted sesame oil

4 garlic cloves, minced


  1. Wash chicken under cold water, pat dry with paper towels, and place on a large plate

  2. Spray BBQ grill with cooking spray or heat Panini on grill and high setting

  3. Preheat BBQ grill to medium-high (follow grill instructions). Use indirect heating (don’t grill directly on flame or burners)

  4. Mix all ingredients together except the Chicken. Use half the marinade on Chicken and rub on both sides well.

  5. Grill 6-10 minutes each side or until done.

  6. If using Panini grill, sear each side for 1 minute or less to get grill marks on chicken, and it will take a bit longer using Panini grill (about 8-12 minutes)


Guru Tips:

  • Recipe and be halved or doubled

  • Refrigerate leftover rub and use another time. Spoon marinade over chicken and never save marinade that has been dipped in chicken

  • Use leftover rub on a skirt steak or a Flatiron Steak

  • For a richer flavor leave rub on up to 1 hour at room temperature before grilling

  • Leftovers make great sandwiches or add ons for Asian style salad

  • Serves 2



Prep Time: 4-6 minutes; Cooking Time 6-8 minutes

4 cups Broccoli chopped or a package of pre-washed Broccoli Flowers (tops)

2 tsp of Extra Virgin Olive Oil

½  tsp of kosher salt

¼ tsp of crushed red pepper flakes

4 large garlic cloves crushed from a garlic press

less than a 1/3 cup of water


  1. If you have a whole Broccoli, wash in water and shake off excess water.  Chop top (head) of the Broccoli into bite-sized pieces. Heat olive oil in a large nonstick skillet over medium-high heat.  Add garlic, red pepper, and salt for about a minute.  Stir constantly until golden (be careful not to overcook).

  2. Add Broccoli and stir for about a minute. Add water. Cover for about 5 minutes or until water is evaporated and Broccoli is cooked crisp-tender. Stir and serve.


Guru Tips:  

  • Recipe can be doubled (use ? cup water or a bit more)

  • Broccolini can be used in place of Broccoli

  • Leftover Broccoli can be used in “Fabulous Veggie Frittata” (Breakfast Episode) recipe

  • Save stems Broccoli (peel or par outer layer) chop up to use in a salad or in “Tangy Tuna Melt Panini” (Lunch Episode)
